Instructions for Cake:
Two Beyond the Grain cake mixes: prepare as directed on the package and pour into 3 (or 4) -
9” round prepared cake pans. Bake the layers for approximately 25 minutes (do not over bake). Transfer cake pans to wire racks to cool ~ cool for about 30 minutes. Remove cake from pans & place right side
Instructions for filling:
You will need:
- 12 ounces of evaporated milk
- 1 ½ cups granulated sugar
- 1 stick of butter
- 4 large egg yolks, lightly beaten
- 1 ½ tsp. vanilla
- 2 cups sweetened flaked coconut
- 1 ½ cups chopped pecans
Place the evaporated milk, sugar, butter, egg yolks and vanilla in a large saucepan over medium heat. Cook stirring constantly until thickened and golden brown in cooler, 10-12 minutes. Remove from the heat. Stir in coconut and pecans. Let the frosting cool to room temperature and a spreading consistency, 30 minutes.
Assembly of cake & filling:
Transfer one layer, right side up, to a serving plate. Spoon some of the frosting, about 1 cup, on top and spread evenly to edge of the cake. Repeat with each layer until the final layer. Slice, serve and watch your family or guest s gobble this cake up!
